Description

  • Celery (Apium graveolens) belongs, like celeriac, to the Apiaceae family.
  • This plant is native to the Mediterranean basin (Fu, 2014). There are two major groups of celery: the so-called “self-blanching” yellow/golden cultivars with nearly colourless petioles and foliage, such as Golden Self Blanching and Celebrity, and the green cultivars with dark green petioles and leaves, such as the Utah and Summer Pascal types (Bruznican, 2020).

PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS

  • The leaves of celery are composed of a petiole, or leaf stalk, and a fully subdivided leaf blade (Deneer, 2017).
  • Its intermediate leaves have a larger stem than the outer and inner leaves (Guerra, 2010).
  • The petioles, the part mainly consumed, are long with strong stems, sweet in flavour and soft in texture. Their colour can vary from green, light green, yellow, light yellow to white (Bruznican, 2020).
  • Leaf colour is potentially controlled by chlorophyll catabolism, as mutation of the yellow petiole is associated with a decrease in chlorophyll content (Bruznican, 2020).
  • The volatile compounds responsible for the specific flavour of celery leaves and petioles are thought to be phthalides and terpenes (Bruznican, 2020).
  • In celery, 68 volatile compounds have been identified. It is also reported to contain caryophylls, β-selenines and seven other sesquiterpene hydrocarbons, essential aromatic components of celery (Bruznican, 2020).

COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)

  • Phenolic compounds were isolated from the crude extract of celery leaves, including chlorogenic acid, luteolin, apigenin and chrysoeriol. In addition to confirming that the crude extract of celery leaves is high in phenolic ingredients, the authors reported that the mentioned plants possess notable bioactivities including anti-inflammatory, antioxidant and antimicrobial activities (Liu, 2017).
  • Apigenin is a flavonoid abundantly available in Apium leaves. It is believed to have anticancer properties (Kowalczyk, 2017).
  • Among the different parts (stem, flower, root, leaves) and families (celeriac and celery) of celery analysed, leaves had the highest content of chlorogenic acid (1790.2 μg/g), trans-ferulic acid (709.5 μg/g), quercetin (29.8 μg/g), rutin (69.6 μg/g) and resveratrol (32.6 μg/g). Therefore, celery leaves have the highest antioxidant potential based on the highest average polyphenol content (Kulig, 2019).

Raw celery is low in energy* as it provides an average of 17.60 calories (kcal) per 100 g, i.e. 73.40 kJ. A stalk of celery weighs on average 30 g, which represents an average of 5.28 kcal.
