Description

  • The potato (Solanum tuberosum) belongs to the Solanacea family.

PHYSICAL AND ORGANOLEPTIC CHARACTERISTICS

  • There are different varieties of potatoes, including the purple coloured potato. This colour is mainly due to the presence of anthocyanins (Liu, 2014).
  • There are also red (Peksa, 2013), white and yellow (Lachman, 2013) varieties.
  • Potato texture varies with starch content and structure, and hydration level. Its firmness decreases with cooking: baked > boiled > fried (Romano, 2018).
  • Cooking has a major impact on the taste and flavour of potatoes. Starch gelatinisation appears to be the major phenomenon in the release of potato flavours (Descours, 2013).

COMPOSITION CHARACTERISTICS (excluding macronutrients, vitamins and minerals)

  • Potatoes contain polyphenols in the skin and in the flesh. However, they are present in greater quantities in the skin (Akyol, 2016).
  • Polyphenol content varies from variety to variety. One study highlighted that coloured flesh potatoes were richer in phenolic compounds than traditional yellow flesh potatoes (Rytel, 2014; Ru, 2019).
  • The predominant phenolic acids in potato are chlorogenic acid and its isomers, accounting for about 90% of the total phenolic content before peeling (Rytel, 2014).
  • The most abundant flavonoid in potato is catechin, although rutin, quercetin and kaempferol have also been quantified (Akyol, 2016).
